Cajun a.k.a Blackened Shrimp & Grits

Everyone in our family LOVE shrimp including the picky eaters and even Aunt Nat with her Shrimp allergy. And this Cajun shrimp and grits make a fantastic meal everyone is just love. I always made this for dinner so my family can still enjoy it either for breakfast/ lunch the next day. All you gotta do is add a little bit of water before heating it up.




INGREDIENTS

Grits

1 cup grits

2 cups chicken broth

2 cups milk

1 cup shredded Gouda/ Sharp Cheddar cheese

2 Tbsp butter


HOW TO

  1. Bring broth to boil. Meanwhile, heat milk in microwave (you don't want it to scorch in the bottom of the pan while bringing to a boil).

  2. Add grits, reduce heat to low, simmer 20 minutes (5 minutes if using quick cook grits). Stir occasionally.

  3. Remove from heat, stir in butter and cheese


Shrimp

1 lb shrimp

4 strips bacon

1 Tbsp cajun seasoning

1/2 Tbsp paprika

1/2 Tbsp garlic powder

1/2 Tbsp black pepper

2 cloves garlic

1 scallion

2 Tbsp chopped fresh parsley



HOW TO:

  1. Mix powdered seasonings, sprinkle generously over both sides of shrimp.

  2. Fry Bacon, remove from pan.

  3. Add Garlic, scallion, parsley and shrimp to hot bacon grease. Cook until shrimp turn pink, about 2-3 minutes per side.

  4. Serve over grits, sprinkle crumbled bacon on top.

  5. Enjoy!
