Fried Okra

Do you know that Okra have a LOT of benefit for your body? I do understand that it is notorious for its slimy thingies which I also did not find appealing. But then I got Cancer. And then someone sent me an article about the amazingness of Okra so I plant them in my garden and either threw it in my family favorite's gumbo or fried them for a snack.





INGREDIENTS

1 to 1 1/2 pounds okra, caps cut off and sliced

1/2 cup flour

1/2 cup cornstarch

1/2 teaspoon salt

1/4 teaspoon pepper

1 egg

1/4 cup milk

Vegetable oil


HOW TO

  1. Mix together flour, cornstarch, salt and pepper. I usually do this in a zip bag.

  2. In a separate bowl, whisk together egg and milk.

  3. Working in several batches, place okra in egg mixture and coat well.

  4. Transfer to coating mix.

  5. Pour Vegetable oil in a skillet on medium high heat.

  6. Place okra in the oil. Try not to crowd them. Cook until both sides are light golden brown; flip over a few at a time or it will take a long time to work your way through all of them and a few pieces may be overcooked by the time you get to them.

  7. Remove from oil, set aside and continue frying next batches. Making sure to wait until your oil is HOT!

  8. Once you finished all Okra, go back to the first batch you fried and throw them back into the HOT oil. Fry for another 2-4minutes until golden brown.

  9. If this does not make your Okra super crispy and crunchy, you can curse me LOL (please don't!)
